Sourdough Bread Recipe

Sourdough bread is among the most natural and delicious bread types. Because it is a natural product, it is recommended by dietitians and doctors. You can easily make sourdough bread yourself at home. For this, you need to prepare the sourdough beforehand.

For the sourdough Half a pack of fresh yeast, juice of half a lemon and 90 grams of flour are needed. Mix all the ingredients in a bowl. Make sure it has a slightly thick consistency. Cover the container and leave it at room temperature for at least 12 hours. Before starting to make bread, break off a piece of yeast and throw it into the water. If it is sinking, it is not ready. If it floats on the water, your yeast is ready.

For the bread dough; You will need 400 grams of bread flour, 300 ml of warm water (one and a half glasses), sourdough, 2 teaspoons of salt.

Mix warm water and yeast in a bowl. Sift the flour into the mixing bowl. Make a gap in the middle and add the yeast mixture. Start mixing slowly. Make it into a sticky, runny dough. Cover the container and leave it for half an hour.

At the end of half an hour, you do the folding process. You can think of it as folding a piece of paper into four. You lift the dough from one corner at a time and put it on top of the other half. You do this 3 or 5 times every half hour. If you want to make folding more comfortable, you can put oil on your hands.

At the end of the folding, take the dough into a floured pan and close the lid. Place the bowl filled with hot water and the dough pot in the oven and leave for an hour.

Place the dough in the granite pot, if there isn't use a steel pot, and close the lid. Bake in the preheated oven at 200 degrees for 40 minutes with its lid closed and 20 minutes with its lid open. Don't forget to put water in an enamel bowl while the bread is baking. The water will make the bread crispy. After removing it from the oven, let it cool for 1 hour. Then you can slice it and eat it with enjoyment.

Whole Wheat Bread Recipe

You can use whole wheat flour in the sourdough bread we have described above. In fact, for health reasons, you should make all your bread with whole wheat flour.  If you do not have enough time to prepare sourdough, you can also make your bread with normal dry yeast.

Ingredients for whole wheat bread; You need 3 glasses of flour, 1 teaspoon of dry yeast and salt, and 1 glass of warm water. If you want, you can add 1 teaspoon of sugar and 1 tablespoon of olive oil to your dough.

Sift the flour and put it in your mixing bowl. Open a gap to the middle and add yeast and salt (sugar and oil if desired). Stir the mixture slowly to form a dough in the consistency of a pudding. Make sure it is slightly sticky. Cover the container and leave it to ferment for 40 minutes.

At the end of 40 minutes, take the dough into the container or tray and shape it. You can sprinkle flour on the bottom so that the dough does not stick to the bowl. But you can put wax paper instead. Let the dough rest for an hour.

Bake in a preheated 200 degree oven for about 40 minutes. Don't forget to reduce the temperature to 160 when the top of the bread starts to turn into brown. After removing the bread from the oven, wrap it in a cloth and wait for it to cool.

Buckwheat Bread Recipe

Your buckwheat bread requires 2 cups of raw buckwheat. Wash the buckwheat and leave it in a bowl of water for 8 hours. Then strain the water, put it in the blender, add a glass of water and blend. You can add 1 or 2 teaspoons of salt according to your preference.

Take the blended buckwheat into a glass bowl and close the lid. Leave it for 24 hours at the room temperature. At the end of this period, put oven paper on the cake mould and pour the dough on it. After shaping it, you can optionally add sesame or sunflower seeds on it.

Bake in a preheated 200 degree oven for 60 minutes. After the 50th minute, decrease the heat to 180 degrees. Your yeast-free and gluten-free natural bread is ready.
